Try out some nice big chew bones. I like cow femurs but I have a Dane. That may be a bit big but many butchers will cut them for you. See how fast they gnaw into the marrow!
The butcher here is super pricey for people but he makes a dog mix of cuts when he trims. It's human grade, not junk (as in no hair, skin, not all fat, etc) and no bones. You can also get a butcher generally to grind meats with bones, that way you won't have to worry so much about those.
Please don't worry about 'balance' so much!!! How do you feed yourself? Your children? Not kibble I am sure!! You'll feel much better after reading Kymythy Schultze's book. I read it all the time. It's really a great overview and addresses so many of the issues. And after you read the Pitcairn chapter on kibble you just won't feel good about kibble again.
Find a holistic vet in your area, they will be more supportive and helpful. And there are a lot of raw feeders these days to help you get started! The beginning is tough, but you'll grow more comfortable with it, especially as you see the improvements in your dog. My dog has een raw fed his whole life, and people literally stop their cars and pull over to see him - he radiates health and happiness!
