Well..... ahem. A Scottish Deerhound can do coursing right AND keep sound all their life, and is as big as, or bigger than, and AKC grey.
Remember that the first year the AKC offered its Lure Coursing National Championship, the winner was Rory, Ellen Bonacarti's great running deerhound. That same year he also won the ASFA International Invitational (II). In both competitions, he beat quite a few greyhounds as well as whippets, salukis, and all the other, smaller, hounds.
Lure coursing is simply not that gruelling physically that a great deal of physical challenges cannot be overcome by heart. If a dog is a great running dog, I don't see that the small differences in size between an NGA and an AKC grey will make that much difference on the coursing field.
I DO think that a dog with a passion for the lure, in whatever size body, is what you want here. If the dog is conformationally decent and physically sound, that passion will take care of the rest on the lure coursing field.
In true coursing (hunting), this is less true, because the course is so much more demanding.
