Hi, welcome.
Well, I'm a new shar pei owner - but I don't htink they need a special care. Groomingwise. They are very short-coated, some of them are almost bold, their ears do not have to be trimmed.
But because of their wrinkles they may have a lot of skin problems.
I just wash mine once per 10 days (if to do it more often - his skin may get very dry) in a special shampoo that I bought from my wet and put a kind of a conditioner on his coat after that.
Some people just wash their dogs in a human conditioner with no soap. It depends on each individual dog.
Their ears need to be cleaned once a week.
I brush my bandit'd teeth once a week with a special rubber-finger-tooth-brush (he doesn't like other brushes). Plus, he chews raw bones (actually, not raw-raw, but bones made of natural stuff) and also he chews a rope - which is a kind of flossing for him.
Thant's basically it.
As for food - I try to avoid soy-containing food (I give him Iams for Puppies or Ol'Roy). Some shar peis have allergies for rice (!!!). Looks like mine has it too.
That's all I can say judjung by my not so long experiense.
And you know what: THEY DO NOT SMELL!!! THAT'S TRUE! I mean a usual doggy odor here. They don't - who knows why, maybe because of heir super short coat?
