Glad you pipped up Lynn as "greyhound" is what popped into my head. I also think you're dead on about the Akita and CBR. I would guess that the CBR also needs lots of socialization; the ones I've met are nice, but though dogs with a MUCH harder temperament than most labs. My big concern about a viszla would be the "boredom" factor. I don't know, but wouldn't be surprised if the viszla became distructive with lots of alone time. I would guess that getting 2 greyhounds might not be a bad idea. They could keep each other company. I'd start with one and add another a little later. Greys usually get along great (greyt?) with other dogs and other people. Also have you considered Foxhounds?
Silogram, maybe if you could tell us what attracted you to the breeds you listed we could help you more. I just don't see a very obvious common thread between an Akita and an English setter other than size. Please let us know what you consider a must (say larger size?) and what you're willing to negotiate with (say coat?). Will you be able to take the dog to an obedience class once a week for several months (say 2-3 eight week classes) or would you rather have a dog that is a bit "easier"?
Either way I would definately suggest an adult not a puppy. Of course your best source of info would be a quality breeder which you can often find at a local dogshow, but you'd have better luck narrowing your choices down to 5-6 breeds like you've done.
